Do you like a lot of crust or just a little?: Little crust, I like to eat the fillings!
Do you buy pies or make them? Tell us about that.: With pumpkin pies, we prefer to make them. This is due to most commercial pumpkin pies having cinnamon.
Are there any pies you make or have that are a family tradition – like pumpkin pie for Thanksgiving?: None
Is there anything that you think would make a really great pie but that you’ve never seen in a pie?: Peanut butter!
Any other pie-related things you’d like to share?: No
Excluding homemade, where do you think the best pies come from?: Josef’s European Pastry Shop in Grosse Pointe Woods!!!! The best in southeast Michigan since 1971! My mom has been going there for decades, before I was even born.
And finally, are you having any PIE today? What kind?: Maybe another pizza pie! Hello Buddy’s!!!!!

Zack Dukicin: Do I even need to ask this question? Do you like pie?: Love it!
What are your favorite typess of fruit pies?: All: apple (made with no less than three types of apples), blueberry, mixed berry, strawberry, cherry, cran-cherry, very cherry (tart and sweet cherries), plum, peach, grape, nectarine, pear, pear-cranberry, cherry-berry, pumpkin, sweet potato, rhubarb, rhubarb mixed with practically any fruit (cherry, blueberry, plum, apple, pear, strawberry), and green tomato
What are your favorite types of cream pies?: Chocolate, banana, lemon, strawberry, strawberry-cheesecake, strawberry-banana, plum custard, rhubarb custard
What are your favorite types of meat pies?: Chicken pot pie, turkey, beef, French meat pie, pulled pork pot pie, and quiche with any type of meat like ham, bacon, chicken, or breakfast sausage. Plus any type of pizza pie with any type of meat.
Have you ever had a frozen or ice cream pie? What kind?: Yes, lemonade pie and ice cream pies.
Do you like your fruit pies hot or cold? With or without ice cream – a la mode?: Both – with ice cream if possible.
Have you ever had any of the non-traditional type pies like quiche, pasties, calzones, or hand pies? Which ones?: All sorts of quiche, beef, pork, and chicken pasties (homemade), calzones with whatever toppings I want, fruit hand pies — All homemade. We’ve never bought from a store.
Do you like a lot of crust or just a little?: I like just a little. If I had it my way, I’d usually just eat the filling. Mom loves the crust so she will eat mine if I leave any. Pizza crust I love, but like to dip it in pizza sauce or ranch.
Do you buy pies or make them? Tell us about that.: We’ve only ever had one Achatz pie. My mom makes all our pies. My grandpa used to buy pies from Meijer or Kroger. Growing up my mom had lots of pies from Baker’s Square – they specialized in pies.
Are there any pies you make or have that are a family tradition – like pumpkin pie for Thanksgiving?: Cherry-Berry pie for Fourth of July
Pumpkin or Sweet Potato for Thanksgiving and Christmas
Lemon Meringue for Easter
Is there anything that you think would make a really great pie but that you’ve never seen in a pie?: Pretty much if we want it, my mom will make it. She’s made pies and canned pie filling from anything and everything – even Green Tomatoes which tastes like apple pie and Concord grapes which takes a long time because of having to seed the grapes – but so worth it! My mom says she’s thinking of making a peanut butter crust and peanut butter crumble topping when she makes her next grape pie — it should be like eating a peanut butter and jelly sandwich. Hope she still has some that she canned left over in the pantry!
Any other pie-related things you’d like to share?: My mom’s favorite pie is — Boston Cream Pie. Actually it probably isn’t really a pie, but it is her favorite. Growing up she always wanted it for her birthday, but her mom didn’t make it and Baker’s Square only offered it as one of their Monthly Special pies once a year (and it wasn’t in June when my mom’s birthday was). My grandpa would always buy one when they were available even though it wasn’t her birthday. Now my mom will make it on occasion and my Dad will buy her one if he happens to see it in the grocery store.

Also, my mom can’s or freezes most of our pie fillings. Starting in May/June we go strawberry picking, then hit every fruit season here in Michigan that we can. She cans most, but freezes and cans others then when she wants to make a pie, it’s super quick and easy because all she has to do is open a can or two, make the crust, dump and bake.
Excluding homemade, where do you think the best pies come from?: My grandpa used to make good pies too and my great grandma. Never really had store bought or from a restaurant. Pizza would be the one exception and for that it is of course Little Caesars.
And finally, are you having any PIE today? What kind?: Absolutely. Mom made sausage, hash brown, and cheese crustless breakfast quiche for breakfast, chicken pot pie with puff pastry crust for dinner, and cherry-berry (cherry, blueberry and cranberry) pie for dessert. Plus I worked today from 3-9 and got pizza while I was there. It was a Pietiful Day!

Have you ever had any of the non-traditional type pies like quiche, pasties, calzones, or hand pies? Which ones?: We have had pizza calzones, mom mad quiche but I would not try it.
Do you like a lot of crust or just a little?: Stuffed crust is the best if not little crust unless it is Detroit Style then it is yummy.

When Brian was working here he used to sometimes bring home extra chicken & turkey pot pies at the end of the day.
