Lisa Dukicin: There aren’t many cookies I don’t like, but there are a few that I only make at Christmas, so I had to pick one of those. I guess I’ll go with Mincemeat! I know some of you are probably saying “YUCK!” but honestly they are really good. They have dried fruit in them (raisins and currents), candied fruit (green & red cherries and pineapple), and a whole bunch of spices. Somewhat like a raisin spice cookie but so much better. One of my Great-Grandmothers was from England, and I have carried on many of the English Christmas traditions that she handed down. I make these cookies are from one of her original recipes. Interesting Fact: I make my own mincemeat and store it in the refrigerator. The jars I have right now are 6 years old — yes, YEARS! Mincemeat gets better with age and is preserved by adding brandy to it. I’ve had batches for up to 10 years.
